Pesto Zoodles with Cherry Tomatoes

– 1 pkt cherry tomatoes
– 2-3 small/medium zucchinis spiralized

Pesto Ingredients
– 2 cups fresh coriander
– ½ cup hemp seed flakes
– 2 cloves garlic
– ½ tsp sea salt
– ¼ cup hemp seed oil

Spiralize zucchini into zoodles or cut into fine slices. Place the zoodles into a steamer and cook until soft. Halve the cherry tomatoes and set aside. To make the pesto, blend all ingredients in a food processor except hemp seed oil. Process until all the ingredients are finely chopped. Drizzle hemp seed oil slowly while still blending ingredients. Stir pesto through the zoodles and cherry tomatoes and serve.
