Spring Roll Bowl with Garlic Lime Sauce

Serves 3-4

Prep Time 30mins


1 pkt rice noodles
1 handful basil
1 handful mint
1 handful coriander
2 serrano peppers
¼ cup chopped peanuts
2 avocados
2 carrots
1 bell pepper
1 medium cucumber

400g chicken breast / shrimp / tofu

Sauce Ingredients
3 cloves garlic
2 Tbsp rice vinegar
¼ cup brown sugar
1/3 cup lime juice
1/3 cup vegetable oil

Blend the sauce ingredients together in a food processor. Cook rice noodles by soaking them in cold water for approx. 30 minutes. When soft, transfer to pot of boiling water for 1 minute before draining. Mince the herbs and slice the serrano peppers then peel the vegetables into fine slices. Toss the noodles with the sweet garlic lime sauce and add vegetable ingredients to serve.

Our Tip

If you prefer a sugar free option, remove the brown sugar, and remember fish sauce also contains sugar. Substitute distilled white vinegar instead of rice vinegar.
