Ingredients
4 cups sugar snap peas
½ large cucumber
1 small red bell pepper
2 medium mandarins
1 small red onion
Dressing Ingredients
3 Tbsp soy sauce
3 Tbsp rice vinegar
1 Tbsp honey
½ Tbsp manuka honey
½ tsp minced garlic
½ tsp fresh grated ginger
¼ tsp black pepper
2 Tbsp hemp seed oil
1 Tbsp hemp seed flakes
1 Tbsp sesame oil
Combine vegetables in and fruit in a bowl and set aside. To prepare the dressing whisk together the soy sauce, rice vinegar, honey, garlic, ginger and black pepper. Drizzle the hemp seed oil and sesame oil in slowly, whisking until fully combined. Drizzle ¾ of the dressing over the salad and toss with a large spoon. Garnish with hemp seed flakes and serve remaining dressing on the side.

Once dressing has been drizzled over salad, leave to soak for a few minutes prior to devouring.
