Ingredients
4 medium potatoes
3 small kumara | sweet potato
3 medium carrots
1 pkt goat feta
2 medium beetroot
1 handful of fresh spinach
pinch salt
Pre heat oven to fan bake at 180 degrees. Cut root vegetables into similar sized cubes and place in a bowl. Drizzle hemp seed oil into bowl and toss vegetables until oiled. Lay out evenly on oven tray and place in oven. Cut goat feta into even chunks and set aside. Once cooked remove vegetables from oven and leave to cool for 5 minutes. Serve the root veggie salad with goat feta and a handful of fresh spinach. Drizzle and sprinkle hemp seed oil and flakes over the salad for added depth to your dish.

If you’re in a hurry, cut your vegetables smaller to reduce cooking time.
