Ingredients
2 cups blanched almonds
1/4 cup hemp seed flakes
1/2 cup sesame seeds
2 Tbsp manuka honey
1/4 cup finely grated lemon rind
2 Tbsp lemon juice
2 cups desiccated coconut
Keep separate from first batch above
1/4 cup hemp seed flakes
1/4 cup desiccated coconut
Place the almonds, sesame seeds, honey, lemon rind, lemon juice and the first portion of coconut in a food processor and process for 1-2 minutes or until the mixture comes together.
Place the remaining coconut on a large plate with the second portion of hemp seed flakes. Roll tablespoons of the mixture into balls and roll in the coconut and hemp seed flakes to coat. Place bliss balls on a tray and refrigerate for 10 – 20 minutes.
